Makes: 10 bowls
Description: How can you make mashed potatoes a meal instead of a side? Add cabbage, scallions and bacon! Even if you're not Irish, after eating this, your eyes will be smilin' too! A fantastic comfort food, easy, inexpensive and insanely delicious, this will fast become a favorite wintertime meal for your family too. Its even better the next day!
Ingredients:
5 lbs
potatoes
1lb
bacon
2 sticks
butter
1 head
cabbage
1 cup
milk
to taste
salt/pepper
1 bunch
scallions
5 cloves
garlic
Instructions:
chop, boil potatoes and garlic cloves together (personal choice, I use Red Bliss, but have also used Yukon Gold)
make mashed potatoes,add butter, milk and mash (leave the garlic in the potatoes as you mash them)
boil the cabbage with a few pats of butter and kosher salt (the butter helps soften the cabbage)
cook the bacon.
chop the cabbage and bacon
mix the cabbage and bacon into the mashed potatoes, add chopped scallions
salt and pepper to taste
add more milk if too dry (type of potato used can affect dryness)
This sounds so good, I'm saving this to try for sure!
Oh, I love Colcannon! It's a little time-intensive but oh so worth it. Don't forget to put a big pat of butter in the well.
Colcannon is wonderful. If you have leftovers from your boiled St.Patrick's Day Dinner, this is a great dish to make.
