Southwest Salsa

Makes: 8 Cups

Description: This salsa/dip is a huge hit at potlucks and family functions. It's fresh and healthy so you never feel bad dipping a few chips in or adding it to entrees, breakfast burritos or topping grilled meat. I got the recipe years ago from a friend and have tweaked it to my preferences over the years. Feel free to add/subtract tomatoes or avocados to taste.

Ingredients:
3  Avocados, chopped
3  Tomatoes, chopped
1  Bunch green onions, sliced
1  Bunch cilantro, chopped
1  Can corn, drained
1  Can black-eye peas, rinsed and drained
1  Can black beans, rinsed and drained
1  Small can black olives, chopped
1  Dry Italian Dressing Mix, prepared as instructed on package

Instructions: Mix all ingredients together. Chill and serve with tortilla chips.
