What are your favorite meatless meals?

It's sometimes tough to find meals that are plant-based and also delicious. Can you help? Tell us about the the vegetarian meals you make - or just love to eat! Make sure to post links to your favorite recipes or cooking sites if you can.

lentil tacos - just used lentils instead of meat you can leave them as is or mash half and leave the other whole.

i just made cauliflower alfredo. cauliflower, nutritional yeast, onion powder, garlic powder, salt, pepper, with breaded tofu

I've been vegetarian for years and eat a lot of plant based meals. My favorite is falafel with sweet potato fries. I also make a lot of meatless pastas, vegan chicken nuggets and veggie burgers.

I love spaghetti with flavored ragu, 3 color bell peppers, onions, zuchini, no-salt, garlic, tomatoes, shredded carrots, parmesan and other cheeses sprinkled on top and whatever else you'd like to involve...

My favourite meatless dish is spaghetti and zucchini balls, the zucchini balls is used as the meat in the recipe. This an awesome dish and you would not even believe that the zucchini is there. The sauce just rounds off the taste and aroma.

Over the summer, I cooked for one of my grandsons who is vegetarian. I found that baked tofu (found in my local super market) works best in several of my recipes. I've sliced a block lengthwise, breaded and made delicious cutlets. Also cubed it and made it the same as I would a Butter Chicken recipe. Placed on a cookie sheet with mixed veggies (broccoli, brussel sprouts and carrots, sprinked with salt, pepper, garlic powder and olive oil) and roasted in the oven. Healthy and yummy!

Quinoa with stir fried vegetables. This is a quick, simple and fulfilling meal. To make it I first toast a cup of quinoa in pot for like 5 minutes, then wash it twice. After washing I add two cups of water and a pinch of salt. I let the quinoa cook for about 10 minutes. Whilst the quinoa is cooking I prepare my vegetables...I like to use fresh broccoli, sweet peppers, lots of onions, garlic, diced carrots and canned corn ( to be added after) I use butter to stir fry. When everything is ready i combine quinoa and vegetables. And i eat!
