In light of the economy, anyone want to post economic recipes in general? MIght be fun if anyone has any that their grandparents passed down to them after living through the depression. I will be back to post some, but thought I would see if anyone else was interested as well...

Try using some of the less expensive cuts of meat and cook them low and slow. Some of my favorites inlcude pork shoulder, chuck roast and short ribs. On Sunday, roast a pork shoulder pot roast with carrots and onions for 4 to 5 hours - the perfect Sunday supper. Later in the week, chop up all the leftovers into bite-sized pieces and add a can or two of mild green chiles. You will have the filling for hearty and delicious burritos! For other ideas check out my articles in the SheSpeaks Special Addition section.

Lindaman22, I have found you can put Romano cheese on top of anything and it is good! I will try that!

Chicken in the crockpot is sooo easy, and cheaper than many of the ground beef recipes I've seen lately. I throw in about 3/4lb chicken, diced (have used breast & legs, both were great and not too far apart calorically), 1 15oz can diced tomatoes, 1 small onion, slivered, 3 cloves garlic minced, 1 8oz can tomato sauce, Italian seasoning, red pepper flakes, and salt & pepper. Let cook on Low for 6-8 hrs. Serve with pasta or just bread. Delicious, nearly effortless. Its on the weekly menu. :D
