In light of the economy, anyone want to post economic recipes in general? MIght be fun if anyone has any that their grandparents passed down to them after living through the depression. I will be back to post some, but thought I would see if anyone else was interested as well...

Recently, I just fall in love with homemade pesto sauce, easy and money-saving and it's good for pasta, salad and sandwiches. 1) a bunch of fresh basil leaves 2) Parmesan cheese 3) little bit of salt and pepper 4) olive oil, you can add bit by bit in between blending 5) a glove of garlic; put all these into a blender and beat it until all blended. I use it to make pasta, green salad with chicken and shrimp sandwiches.

We have been eating a lot of pasta with beans. I make it in one pot and it takes maybe 15 minutes to make. I rinse a can of beans (I like the black ones) and fill the pot with water about an inch higher than the beans and bring to a boil - add a box of pasta, a bouillon cube, whatever spices you like, and any veggies you have around (broccoli, spinach etc). Cook until pasta soaks up water (add more if necessary). Serve hot with some romano cheese on top - YUM!!

I made the most delicious sloppy joes the other day. Use some ground beef, sloppy joe seasoning and I added some Fischer & Wieser Razzpotle Roasted (raspberry chipotle sauce). I bought this bottle at Costco for $10 and I still have a lot left for other food items, I'm trying to figure out what other foods I can pour this sauce on. This sauce is also very delicious with Pork Chops. My friend used it as an appetizer, poured it on top of cream cheese and served with crackers. It is so delicious and not spicy at all!

Here is something - I was doing a survey a couple of days ago and it was asking what I thought of Spam. Then it asked what I thought of Kraft Mac & Cheese. Then it asked what I thought of putting them together. Wonder if Spam or Kraft are thinking about featuring that recipe on their box/can in light of the economy. Neat. I must try it now!
