INGREDIENTS (Serves 4) Pulled Pork: - 3 to 4 lb pork shoulder (cut in half to speed up cook time) - 3 tbsp @Spanglish Asadero Taco Seasoning - 1 orange, sliced - 1 large yellow onion, sliced - 1 cup Spanglish Asadero Carne Asada BBQ Sauce Mexican Street Corn: - 4 ears sweet corn, grilled - 1/3 cup mayo - 2 tbsp fresh lime juice - 1 tsp chili powder - 1/2 cup cotija cheese, crumbled - 1/2 tsp lime salt Potatoes: - 4 large russet potatoes - 4 tbsp butter - Salt and pepper to taste - 1 cup Mexican shredded cheese Toppings: - 1/4 cup chopped cilantro - 1/4 cup diced onions - Extra cotija cheese - Extra Spanglish Asadero Carne Asada BBQ Sauce INSTRUCTIONS Pulled Pork: 1. Cut pork shoulder in half to reduce cook time. 2. Season evenly with taco seasoning (no binder needed). 3. Smoke hot and fast using mesquite wood at 275°F to 300°F until bark forms. 4. Place in a pan with sliced orange and onion, cover, and continue cooking until tender (internal temp around 200°F to 205°F). 5. Rest for 30 to 45 minutes, shred, then toss in carne asada BBQ sauce. Mexican Street Corn: 1. Grill corn until lightly charred, then cut off the cob. 2. Mix with mayo, lime juice, chili powder, cotija cheese, and lime salt. Potatoes: 1. Bake at 400°F until fork tender (about 60 minutes). 2. Slice open, fluff with butter, salt, and pepper. 3. Add shredded cheese and let it melt. BUILD IT: 1. Load potato with pulled pork. 2.
