Makes: 8 Servings
Description: Delicious chili alternative that my children eat, even my child who does not like beans.
Ingredients:
2 to 3 cans
White Kidney Beans or Great Northern Beans
1 pound
Boneless, skinless chicken breast, chopped
1 large can
Chicken Broth
1 Jar
Salsa Verde
1 cup
Grated Mozzarella Cheese
2 tsp each
Ground Cumin, Chili powder, Dried Oregano, Minced Garlic
1
Medium chopped onion
Instructions:
Cook chopped chicken and onion over medium heat in olive or coconut oil until lightly browned.
Add minced garlic and cook for 1 minute.
Add chicken broth, cumin, chili powder and dried oregano, and bring to a boil.
Add Salsa verde and drained beans.
Simmer for about 30 minutes. Garnish with mozzarella cheese, chopped green onion or chives.
This recipe looks simple to make and like it tastes amazing! Can't wait to try it.
