Red Velvet Cookie Sandwiches

Makes: 12 cookies

Description: The recipe is super easy to follow and they taste amazing! It's a fun, colorful recipe to use for any festive event.

Ingredients:
1 package  red velvet cake mix
2  eggs
1/3 cup  vegetable oil
4 oz.  cream cheese
4 Tbsp.  butter
1/4 tsp.  vanilla extract
2 cups  powdered sugar

Instructions: Mix 1 package of red velvet cake mix w/ 2 eggs & 1/3 cup of vegetable oil.

Roll into 1 inch balls and place 2 inches apart on a cookie sheet lined w/ parchment paper. Bake for 10 minutes at 350 degrees. Let cool completely.

For the filling, let 4 oz. of cream cheese & 4 Tbsp. of butter come to room temp. Mix until smooth, then add 1/4 tsp. of vanilla extract. Slowly mix in 2 cups of powdered sugar. Whisk until smooth & fluffy.

After cookies have cooled, add a spoonful of filling & sandwich between 2 cookies. I put my cookies directly into the fridge afterwards to help the filling set.
