Description: Absolutely no baking required. This is a favorite among my family and friends, I get scorned if I don't bring it to get-togethers. It's easy to make and can be prepared just in time, or way ahead of time.
Ingredients:
1 pkg
cream cheese, or neufchatel cheese
1 tsp
vanilla/or vanilla extract
1/3 C
lemon juice
1 14 oz can
sweetened condensed milk
1 pkg
graham crackers
1/2 stick
butter
1/2 C
sugar
1 can
cherry pie filing (optional)
Instructions:
Make the crust first
In a food processor mix graham crackers, sugar and melted butter. Or, if you don't have a food processor, crush graham crackers in a gallon Ziploc bag with a rolling pin, or glass. Then mix with sugar and butter. Spread evenly into 9" pie pan, press firmly.
Combine cream cheese, softened or warmed to room temperature, vanilla, lemon juice and sweetened condensed milk. Mix until smooth.
Poor cream cheese mixture over graham crust.
Top with fruit of your choice. We usually use cherry pie filling.
