Mini Strawberry Bread Loaf

Makes: 3 3

Description: A mini loaves of strawberry bread perfect for gifting to neighbors and friends.

Ingredients:
2 cups  all-purpose flour
1 tsp.  baking soda
1/2 tsp.  salt
1/2 cup  granulated sugar
1/4 cup  light brown sugar
1 large  egg
1/2 cup  plain or vanilla Greek yogurt
1/2 cup  buttermilk
1/3 cup  canola oil
1 tsp.  vanilla extract
1 cup  strawberries (fresh or frozen), tossed in 1 T flour
1 T  sparkling sugar, if desired

Instructions: Preheat oven to 350 degrees. Spray mini loaf pans with nonstick cooking spray.
The pans I used are 4.5 x 2.5 and I used 3 pans for this recipe. You could also use
one 9x5 loaf pan.

In a large mixing bowl, whisk together the flour, baking soda and salt. Set aside.
In another bowl, whisk together the sugars and egg. Add the Greek yogurt, buttermilk,
oil and vanilla extract. Pour wet ingredients into dry and stir just until combined.

Gently fold in the strawberries that have been coated with flour.
Divide batter between mini loaf pans or pour into one large loaf pan.

Bake for 30 - 45 minutes, depending upon the size of your pans or until a toothpick
inserted comes out clean. Remove from oven to cool on a wire rack.

Wrap cooled loaves in plastic wrap or cellophane and decorate with ribbon.

Gift to neighbors, delivery drivers, the mailman or anyone who loves sweets.
