Makes: 10 Servings
Description: A recipe from my grandmother, and a family favorite. Its quick to make, and super yummy.
Ingredients:
1 ¼ c.
boiling water
1 c.
quick oats
½ c. + ¼ c.
margarine
1 c. + ½ c.
granulated sugar
1 c.
brown sugar
1 tsp.
cinnamon
½ tsp.
nutmeg
½ tsp.
salt
1 ½ c.
flour
2 tsp.
baking powder
1 tsp.
baking soda
3
eggs, beaten
1 c.
coconut
¼ c.
milk
½ c.
ground nuts (optional)
Instructions:
Pre-heat oven to 350°. Grease pan (we use a 9x11, but can be done in an 8x8 or similar in a pinch).
CAKE
In small mixing bowl, pour boiling water over oats, add ½ c. margarine and let mixture stand for 20 minutes.
In larger bowl, mix together 1 c. granulated sugar, brown sugar, cinnamon, nutmeg, salt, flour, and baking powder, baking soda. Add in oat mixture and eggs, and beat well.
Pour into greased pan and bake at 350° for 35 - 40 minutes.
TOPPING
Brown ¼ c. margarine, coconuts, and ½ c. sugar in skillet over medium heat. Add in milk and cook an additional minute. Remove from heat and add nuts now if you're using them. Spread over cake, and enjoy!
This crisp has a crunchy, crumbly topping with a warm and soft center. Topped with ice cream, it is sure to be a hit.
