Key Lime Bars

Makes: 12 Squares

Description: This was actually my first time making them and they were a big hit with me and a couple of my friends! They are really simple to make!

Ingredients:
12  Large graham cracker rectangles (made into crumbs)
2 Tbs  ground pecans
1/3 cup  granulated sugar
1/4 tsp  cinnamon powder
1 stick (1/2 cup)  unsalted butter, melted
3  egg yolks (room temperature)
1 can (14 oz)  sweetened condensed milk
1/2 cup  key lime juice of your choice

Instructions: Place your rack in the center of your oven and preheat it to 3500F.
Spray an 8x8 square baking pan with cooking spray and line it with parchment paper, set it aside.
In a mixing bowl, stir together graham cracker crumbs, ground pecans, cinnamon & sugar.
Add the melted butter and stir to combine. Make sure all the crumbs are moist. Press the crumbs into the bottom of your pan and bake for 10 minutes. Remove from the oven but leave the oven on.
Now using your electric mixer bowl with the whisk attachment, whisk together yolks for 2 minutes. Then add the condensed milk and continue to whisk for another 2 minutes. Stop the mixer and scrape down the sides with spatula. (If using zest add that in now)
With the mixer on low, drizzle in the lime juice and let the mixer run for 2 minutes once all added. The mixture will be slightly thicker when done.
Pour the filling into the crust and bake for 15 minutes.
Take out of oven and cool on rack till filling cools.
Refrigerate for at least 2 hours, slice and serve chilled and ENJOY!!
