Kesar (Saffron) Kulfi

Makes: 4 Icecream bars

Description: Kulfi is a popular frozen dairy dessert from the Indian subcontinent. It is often described as "traditional Indian Subcontinent ice cream" and this easy recipe is from my Aunt!

Ingredients:
2 1/2 cups  Milk (I used whole milk)
1/2 cup  Condensed milk
1/4 cup  Milk powder
1/2 tsp  Cardamom (elaichi) powder
1/4 cup  Nuts (almonds, cashews, or raisins)
3-4 strands  Saffron

Instructions: 1.Combine the milk, condensed milk, and milk powder together and bring to a boil. Add the nuts and cardamom powder.
2.Dissolve the strands of saffron in 2 tsp milk and pour in the above mixture
3.Simmer for 20 to 25 minutes or untill the mixture thickens. Cool completely.
4.Pour into 4 kulfi/icecream moulds and freeze overnight till firm.
5.To serve, take the kulfi out of the mold and transfer immediately to a dessert plate.
6.Serve whole or cut into smaller pieces, garnish with crushed almonds/cashews.

I made this because I needed a quick easy desert. It's very easy to make, but it was delicious! Not too sweet, great for diabetics, no added sugar. Very refreshing. I shared this with a couple of friends too.
