Makes: 4 servings
Description: something a little different and if you're tired of hot dogs, hamburgers or ribs....
Ingredients:
1/2 cup
extra virgin olive oil
1/4 cup
red wine vinegar
1/2 cup
pitted olives (Green Greek or Kalamata), quartered
2 Tbsp
fresh lemon juice & rind of one lemon
2
cloves of garlic, minced
1 Tbsp
dried parsley
1 Tbsp
dried oregano
4-6 oz
lettuce, washed & chopped
1/2 cup
cherry tomatoes, diced
1/2 cup
cucumbers, peeled and diced
1/4 cup
red onion, julienne
2-3 oz
Feta Cheese (optional)
1 lb
Baby squid, cleaned with heads/bodies separated
1 Tbsp
extra virgin olive oil
Instructions:
1.In a serving bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried spices and salt & pepper to make vinaigrette.
2.Chop salad, tomatoes, cucumbers and olives. Place in a long serving dish and dress with about ½ of vinaigrette.
3.Turn grill on to medium-high heat, letting grill get nice and hot. Toss squid with 1 Tbsp of olive oil, salt and pepper and place squid on squid on the grill and char each side for 3 minutes until squid is opaque.
4.Remove squid from pan and toss in a bowl with the other half of the vinaigrette and let it rest for 3 minutes, to let squid absorb flavors.
5.Using tongs, place squid on top of salad bed and drizzle remaining vinaigrette & olives over the salad.
6.Totally optional, but you can top off with a little fresh crumbled Feta cheese.
7. Serve and enjoy!
