Description: This cobbler recipe is great with most combinations of fruit so I encourage experimentation with whatever is fresh and easily at hand. I have made it with peaches, pears, apples and all types of berries. Thanks to the first cooking class I took in the late 80's in Boston and to my friend Ben for giving me easy to remember proportions for the topping.
Ingredients:
3 cups
sliced apples, pears or peaches
2 tbsp
brown sugar
1 cup
fresh or frozen berries
1 cup
granulated sugar
1
egg
1 tsp
baking powder
1 cup
flour
6 tbsp
melted salted butter
2 tsp
cinnamon sugar
Instructions:
Preheat oven to 350 degrees.
Toss sliced fruit and berries in a bowl with the brown sugar until the sugar has dissolved.
Mix in a separate bowl the dry ingredients. Add the egg and mix well--consistency will be crumbly.
Transfer the fruit mixture to a baking dish. Put the topping over the fruit so it covers it. Pour the melted butter over the top of the fruit and batter and then sprinkle the top with the cinnamon sugar.
Bake at 350 degrees for 30 minutes.
Best served warm with vanilla or fruit ice cream.
