Balsamic Filet Mignon

Makes: 6 6

Description: Filet mignon with reduced balsamic vinegar.

Ingredients:
1 1/2 cups  balsamic vinegar
3 T  sugar
2 T  butter
6  filet mignon steaks- 1 inch
pinch  salt & pepper
2 oz  soft fresh goat cheese

Instructions: Boil the balsamic vinegar & sugar in a small saucepan over med-high heat until reduced to 1/3 cup, stirring occasionally, about 18 minutes.

Meanwhile, preheat the broiler. Melt the butter in a large skillet over med-high heat. Sprinkle steaks with salt & pepper. Cook the steaks to desired doneness, about 3 minutes per side for med-rare. Transfer the steaks to a baking sheet. Crumble the cheese over the steaks and broil just until the cheese melts, about 1 minute. Sprinkle with pepper.

Transfer the steaks to plates. Drizzle the balsamic sauce around the steaks and serve.

I made this for my family the other night. I do not feel it needed the sugar at all we are eating steak and it does not need to be sweet. if you want the side dishes to have some sweetness to them you could have a sweet potato perhaps. I did not put the fresh goat cheese on top because to me this cut of meat does not require an item like this.
