Marinated Cheese (Southern Living Magazine)

Makes: 25 apps

Description: This is from Southern Living Magazine. It's a little time consuming but so so worth it! There is nothing better than tons of different cheeses!

Ingredients:
1 envelope  Italian dressing mix
1/2 cup  Vegetable Oil
1/4 cup  White Vinegar
2 Tbsp  Minced Green Onion
2 Tbsp  Water
1 1/2 tsp  Sugar
8 oz  Monterey Jack Cheese block
8 oz  Cheddar Cheese block
8 oz  Cream Cheese block
4 oz  Chopped Pimento, drained

Instructions: Whisk together first 6 ingredients, set aside.
Cut Monterey Jack cheese in half lengthwise. Cut each half crosswise into 1/4 inch thick slices. Repeat with Cheddar Cheese and Cream Cheese.
Arrange cheese in 4 rows in a shallow 2 qt baking dish, alternating monterey, cheddar and cream cheeses. Pour marinade over cheese. Cover and chill for at least 8 hours.
Drain marinade. Arrange cheese on platter in rows. Top with pimento and serve with crackers.
