Makes: 4 cups
Description: This is a delicious way to get in your vegetables! This is a very simple salad and can be served warm or cold...and it couldn't be any easier to make! It's nutritious, low calorie, fat free, vegetarian & vegan!
Ingredients:
3 cups
Okra (fresh or frozen)
1
Tomato
2 tbsp
parsley
1 tsp
cayenne pepper
1/4 cup
lemon juice
Instructions: Cook the okra (if using frozen, you can just pop it in the microwave for a few minutes, as specified on the bag). As the okra is cooking, chop up the tomato into bite sized pieces. Pour the cooked okra into a bowl. Stir in the chopped tomato pieces. Add the parsley, cayenne pepper, and lemon juice. Serve immediately or store in the fridge for a few hours for the flavors to mix! Enjoy.
