Cilantro Lime Chicken Skillet

Makes: 4 servings

Description: The combination of lime and cilantro creates a fresh flavor that can be easily incorporated into almost any dish. Here?s my new favorite recipe.

Ingredients:
1 pound  boneless skinless chicken breast (cut into 1 inch cubes)
1 Tbsp.  olive oil
a dash of  salt and pepper
4-5  green onions (chopped, separate white and green bits)
2-3 Tbsp.  minced garlic
1.5 cups  chicken broth
1 can  black beans
4 oz. can  choppen green chilies
2 tsp.  lime zest
3 Tbsp.  lime juice
2 cups  instant rice
1/3 cup  cilantro

Instructions: Heat olive oil in skillet over medium high heat. Add cubed chicken breast. Cook for about 5 minutes. Season with salt and pepper, if desired.

Add white bits of chopped green onions and minced garlic. Cook for another minute.

Add chicken broth, black beans, green chilies, lime juice, lime zest, and green bits of chopped green onions. Bring to a boil.

Stir in rice. Bring to a boil. Cook for 20 seconds, then remove from heat.

Let sit for 5-6 minutes with the lid on.

If needed, return to medium heat and cook/stir for another minute to help rice soak up extra moisture.

Remove from heat and stir in cilantro. Let rest uncovered for 3 minutes.

Enjoy!

This fresh-tasting meal is great by itself, or can be eaten with tortilla chips. For added flavors, consider adding corn or jalapeño.
